Cupcakes are such a fun treat to liven up a party, dinner at home, or anything! They are also much easier then making a whole cake. Explore the many different flavors in this 2 session course where you will bake white chocolate cupcakes with truffle filling; pancake cup cakes with maple syrup; butter cream garnished with bacon; champagne cup cakes with strawberry filling and white chocolate frosting; devils food cupcakes with peanut butter filling; plus a couple more! Fancy foods are not hard to make. Come to this class and learn the two things it takes to be a gourmet chef - organization and knife skills. With some good recipes and someone to teach you using a hands-on approach, its a "no fail!" We will cook things like tuna tar on crispy wontons; bacon cups with Gorgonzola potato filling; sea bass with fennel, swiss chard, and cannellini beans; stuffed flank steak; and more.

Everyone can always use more chicken recipes. Chicken is a very popular food item that almost everyone loves. If your chicken dishes are dry, under-cooked or getting old, this class is for you! Some of the recipes you will make are parmesan-crusted chicken with basil burre blanc; bacon, lettuce and tomato chicken soup with parmesan aoili; chicken enchiladas; stuffed chicken parmesan;sweet and sour chicken; and a few others.

Rachel Ray makes 30 minute meals; how close can we come to that time limit? With the strategies and techniques we will learn in this class, we will come close. Anyone can throw an expensive piece of fish or meat in a skillet for a quick meal, but in this class, we will learn techniques to make a quick braise (think chicken paprikash and French pork stew), to make breakfast into a dinner (frittatas and Spanish tortillas), and to make creative use of leftovers. Forget the hamburger-helper-style quick fixes. Learn to cook quick and delicious meals from scratch.

All ladies love to come to a tea once in a while. Chef Pippitt hosts a tea party for her girlfriends every year and is willing to share some of her tea secrets with you! Recipes include cream scones served with lemon curd; gourmet salads; raspberry crepes with cream; tomato, bacon, and cheddar quiche; chicken, walnut, and grape tea sandwiches; and more. As with all Chef Pippitt's class, you need containers for leftovers. Please bring your favorite tea to share.
